Cream together in a large mixing bowl:
1/2 Cup Butter or Dairy-Free Butter (at room temperature)
1 Cup White Sugar
1/2 Cup Brown Sugar
2 Eggs or Egg Substitute
1 Cup Pumpkin
1 TSP Vanilla
Mix together in a medium bowl:
2-1/4 Cups 9 Grain Gluten-Free Flour Mix
1 TBSP Baking Powder
1 TSP Baking Soda
2 TSP Cinnamon
1/2 TSP Nutmeg
1/2 TSP Ginger
1/2 TSP Clove
1/2 TSP Salt
Stir the dry ingredients into the creamed mixture and then add:
1/2 Cup Chocolate Chips and/or Chopped Nuts
Drop by the spoonful onto a greased cookie sheet or a sheet with a silpat mat.
Bake at 350 for 14 minutes. Enjoy!
